Turkey Breast Casserole Recipe

The turkey breast casserole is an easy recipe that can be quite helpful especially if you are on a diet. This dish has vegetables like baby potatoes, sweet peas, and carrots. Cooking time and preparation: 45 minutes


Small potatoes2 boneless turkey breasts
sea salt
1 cup low sodium chicken stock
2 tbsp crushed garlic
1 tbsp extra virgin olive oil 
1/2 tbsp small oregano leaves (crushed)
black ground pepper (to taste)
7 "baby" potatoes
1/3 cup sweet peas (fresh or frozen)
1/2 cup fresh carrots (sliced)


1- In a cooking pan, put 1 tbsp salt, crushed garlic, black pepper, 3/4 cup chicken stock and oregano.

2- Cook and stir until the seasonings are well mixed.

3- In a crystal container pour the brine and add the turkey breasts.

4- Refrigerate the container for 12 hours.

5- Now, slice the turkey in approximately 1/2 inch strips.

6- Rub the turkey strips with the olive oil.
Fresh carrots
7- In a baking dish place the baby potatoes and season then with just a bit of salt.

8- Add the sweet peas, carrots and turkey breasts.

9- Then pour a 1/4 cup of chicken stock.

10- Mix everything with your hands.

11- How long do you cook turkey breast?

12- Bake for 25 to 30 minutes at 325°.

Add more of your favorite vegetables to make it even tastier.
